Savory herb baked chicken thighs garnished with fresh herbs and lemon

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • 1 teaspoon seasoned salt
  • ½ teaspoon salt, or to taste
  • 3 cloves fresh garlic, minced
  • ½ medium onion, sliced
  • ½ cup chicken broth
  • 1 tablespoon fresh lemon juice

Directions

  1. Preheat the oven to 400°F.
  2. Prepare the chicken. Pat the chicken thighs dry with paper towels. This helps the seasoning stick and helps the skin brown nicely.
  3. Season the chicken. In a small bowl, combine the garlic powder, onion powder, paprika, dried thyme, dried rosemary, Italian seasoning, black pepper, seasoned salt, and salt. Rub the chicken thighs with olive oil or melted butter, then coat each thigh generously with the seasoning mixture.
  4. Prepare the baking dish. Place the sliced onion in the bottom of a baking dish. Arrange the seasoned chicken thighs over the onions. Add the minced garlic around the chicken.
  5. Add the flavor. Pour the chicken broth into the bottom of the dish, around the chicken—not directly over the seasoned chicken. Drizzle the lemon juice over the thighs.
  6. Bake. Place the dish in the preheated oven and bake until the chicken is tender and reaches an internal temperature of 175°F – 195°F at the thickest part, avoiding the bone.
  7. Brown the chicken. If you’d like the skin extra golden and crispy, broil for a few minutes at the end. Watch it closely so it doesn’t burn.
  8. Rest and serve. Remove the chicken from the oven and let it rest for about 5 minutes before serving.

Tips for the Best Chicken

Pat the chicken dry: Before seasoning, pat the thighs dry with paper towels. This helps the seasonings stick and helps the skin brown nicely. Season generously: Make sure the seasoning mixture coats both sides of the chicken. Don’t overcrowd the pan: Leave a little space between the thighs so the heat can circulate and the chicken can brown. Use a meat thermometer: Check the thickest part of the chicken without touching the bone. Chicken is safely cooked at 165°F, although thighs are often more tender when cooked to a higher internal temperature. Let it rest: Allow the chicken to rest for about 5–10 minutes after baking before serving. This helps the juices redistribute.

Serving Suggestions

Pansy’s Savory Herb Baked Chicken pairs perfectly with comforting Southern-inspired sides. Serve it with creamy garlic mashed potatoes, seasoned green beans, collard greens, baked macaroni and cheese, or warm homemade cornbread. For a lighter meal, pair the chicken with a fresh garden salad or roasted vegetables. Add a little pan gravy or spoon some of the flavorful juices from the baking dish over the chicken and your favorite side dishes for an extra boost of flavor.

Storage & Reheating

Store leftover baked chicken in an airtight container and refrigerate within 2 hours of cooking. Enjoy refrigerated leftovers within 3 to 4 days. To reheat, place the chicken in a covered baking dish with a small splash of chicken broth or water to help keep it moist. Warm in a 350°F oven until heated through. You can also reheat individual portions in the microwave.
