Ingredients
For the Lemon Herb Chicken
- 1½ pounds boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Juice of 1 large lemon
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- ½ teaspoon dried thyme
- ½ teaspoon paprika

Directions
1. Marinate the chicken.
In a bowl, combine the olive oil, lemon juice, garlic, oregano, parsley, thyme, paprika, salt, and black pepper. Add the chicken and coat well. Cover and refrigerate for at least 30 minutes.
2. Prepare the vegetables.
