Introduction
Pansy’s Jamaican Jerk Chicken is bold, spicy, smoky, and packed with Caribbean-inspired flavor. Chicken is marinated in a homemade jerk seasoning made with fresh herbs, warm spices, Scotch bonnet pepper, garlic, ginger, and lime, then cooked until beautifully browned, juicy, and flavorful. Serve it with rice and peas, cabbage, or fried plantains for a delicious island-inspired meal.
Ingredients
For the Chicken
- 3–4 pounds bone-in, skin-on chicken thighs and drumsticks
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon salt
For the Jerk Marinade
- 4 green onions, roughly chopped
- 4 cloves garlic
- 1 tablespoon fresh ginger, chopped
- 1 Scotch bonnet pepper, stem removed
- 2 tablespoons fresh thyme leaves, or 2 teaspoons dried thyme
- 2 teaspoons ground allspice
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- Juice of 1 lime
- 2 tablespoons olive oil
Directions
- Add the green onions, garlic, ginger, Scotch bonnet pepper, thyme, allspice, cinnamon, nutmeg, smoked paprika, black pepper, salt, brown sugar, soy sauce, apple cider vinegar, lime juice, and olive oil to a blender or food processor.
- Blend until the ingredients form a thick, slightly textured jerk marinade.
- Pat the chicken dry with paper towels. Make a few shallow cuts in the thicker pieces so the marinade can penetrate the meat.
- Place the chicken in a large bowl or food-safe bag. Pour the jerk marinade over the chicken and massage it thoroughly over and underneath the skin.
- Cover and refrigerate for at least 4 hours, but preferably overnight for deeper flavor.
- Remove the chicken from the refrigerator about 20–30 minutes before cooking.
- Preheat the oven to 400°F. Arrange the chicken skin-side up in a lightly greased baking dish or on a foil-lined baking sheet.
- Bake for approximately 40–50 minutes, depending on the size of the chicken pieces, until browned and completely cooked.
- For additional color and lightly charred edges, broil the chicken for about 2–4 minutes at the end, watching it carefully so it does not burn.
- The chicken should reach a safe internal temperature of at least 165°F in the thickest portion without touching the bone.
- Allow the chicken to rest for about 5–10 minutes before serving.

Pansy’s Tips
Scotch bonnet peppers provide the distinctive fruity heat associated with Jamaican jerk seasoning. They are very hot, so wear gloves when handling them and avoid touching your eyes or face.
For less heat, remove the seeds and inner membrane from the Scotch bonnet before blending. You can also start with half a pepper.
For even deeper smoky flavor, cook the chicken on an outdoor grill instead of baking it. Keep the heat controlled so the marinade caramelizes without burning.
Marinating the chicken overnight gives the herbs and spices more time to flavor the meat.
Serve fresh lime wedges alongside the chicken so everyone can add a bright splash of citrus before eating.
Serving & Storage
Serve Pansy’s Jamaican Jerk Chicken with Jamaican rice and peas, steamed cabbage, fried plantains, or a fresh tropical salad.
Store leftover chicken in an airtight container in the refrigerator for up to 3–4 days. Reheat until thoroughly hot before serving.
Cooked jerk chicken can also be frozen in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
