Introduction
Pansy’s Jamaican Brown Stew Chicken is tender, richly seasoned chicken simmered in a savory brown gravy with colorful bell peppers, onions, fresh thyme, garlic, ginger, and warm Caribbean spices. Browning the chicken first develops a deep, delicious flavor before it slowly simmers until tender. Serve it with Jamaican rice and peas, steamed cabbage, or fried plantains for a comforting Caribbean-inspired meal.
Ingredients
For the Chicken and Marinade
- 3–4 pounds bone-in, skin-on chicken thighs and drumsticks
- 1 tablespoon browning sauce
- 1 tablespoon soy sauce
- 1 tablespoon fresh lime juice
- 1 teaspoon ground allspice
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon seasoned salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 green onions, chopped
- ½ red bell pepper, sliced
- ½ yellow bell pepper, sliced
- ½ green bell pepper, sliced
- ½ large onion, sliced
- 1 Scotch bonnet pepper, left whole for milder heat
- 1 tablespoon vegetable oil
For the Brown Stew Gravy
- 2 tablespoons vegetable oil
- 1½ cups chicken broth
- 2 tablespoons ketchup
- 1 teaspoon browning sauce
- 1 teaspoon brown sugar
- 2–3 sprigs fresh thyme
- 1 bay leaf
- ½ teaspoon ground allspice
- ½ teaspoon black pepper
- 1 small carrot, sliced
- Salt to taste
Directions
- Pat the chicken dry with paper towels and place it in a large bowl.
- Add the browning sauce, soy sauce, lime juice, allspice, smoked paprika, garlic powder, onion powder, seasoned salt, black pepper, dried thyme, garlic, ginger, green onions, bell peppers, onion, Scotch bonnet pepper, and 1 tablespoon vegetable oil.
- Massage the seasonings thoroughly into the chicken. Cover and refrigerate for at least 2 hours, preferably overnight.
- Remove the chicken from the refrigerator about 20–30 minutes before cooking. Separate the chicken pieces from the vegetables, reserving the vegetables and marinade.
- Heat 2 tablespoons vegetable oil in a large heavy skillet or Dutch oven over medium-high heat.
- Working in batches if necessary, brown the chicken on both sides until it develops a deep golden-brown color. The chicken does not need to be completely cooked at this point.
- Remove the browned chicken and set it aside.
- Add the reserved onions, bell peppers, green onions, garlic, and other marinade vegetables to the same pot. Cook for approximately 3–4 minutes until slightly softened.
- Add the chicken broth, ketchup, browning sauce, brown sugar, fresh thyme, bay leaf, allspice, black pepper, and sliced carrot. Stir well, scraping the flavorful browned bits from the bottom of the pot.
- Return the chicken to the pot and carefully add the whole Scotch bonnet pepper.
- Bring the liquid to a gentle simmer. Reduce the heat to medium-low, cover, and cook for approximately 30 minutes.
- Remove the lid and continue simmering for another 10–15 minutes, allowing the gravy to reduce and thicken.
- Make sure the chicken reaches an internal temperature of at least 165°F at the thickest part without touching the bone.
- Carefully remove the whole Scotch bonnet pepper, thyme stems, and bay leaf.
- Taste the gravy and adjust the salt or seasoning if needed.
- Allow the chicken to rest for about 5 minutes, then spoon the rich brown gravy and vegetables over the chicken before serving.

Pansy’s Tips
Marinating the chicken overnight gives the seasonings more time to penetrate the meat and creates deeper flavor. Browning sauce is powerful, so use it sparingly. It provides the chicken and gravy with their characteristic deep color and flavor. Brown the chicken well before simmering it. Those browned bits left in the bottom of the pot add tremendous flavor to the gravy. Keep the Scotch bonnet pepper whole for a gentler heat. Breaking or cutting it will make the dish considerably hotter. Don’t rush the final simmer. Allowing the sauce to reduce uncovered creates a richer, thicker gravy that coats the chicken beautifully. For extra color and texture, avoid overcooking the bell peppers until they disappear completely into the gravy.
Serving & Storage
Serve Pansy’s Jamaican Brown Stew Chicken with Jamaican rice and peas, steamed cabbage, fried plantains, white rice, or vegetables. Spoon plenty of the flavorful brown gravy over the chicken and rice. Store leftovers in an airtight container in the refrigerator for up to 3–4 days. The flavor may become even richer after resting overnight. For longer storage, freeze the cooled chicken and gravy in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat thoroughly before serving.
