Ingredients
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda

- 2 large eggs
- 2 cups buttermilk
- ¼ cup unsalted butter, melted and slightly cooled

Directions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, buttermilk, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients. Gently stir just until combined. Do not overmix. A few small lumps in the batter are perfectly fine.
- Allow the pancake batter to rest for about 5–10 minutes. This helps create softer, fluffier pancakes.
- Heat a griddle or large nonstick skillet over medium heat. Lightly coat the surface with butter or cooking oil.
- Pour about ¼ cup of batter onto the hot griddle for each pancake.
