Pansy’s Southern Sausage Gravy

Pansy’s Southern Sausage Gravy

Introduction

Pansy’s Southern Sausage Gravy is rich, creamy, and filled with savory breakfast sausage and plenty of homemade Southern flavor. Served warm over fluffy buttermilk biscuits, this classic comfort-food breakfast is perfect for slow weekend mornings, family breakfasts, or a hearty brunch.

Ingredients

  • 1 pound breakfast sausage, mild or hot
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • ½ cup heavy cream
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon seasoned salt, or to taste
  • 1 teaspoon freshly ground black pepper, or to taste
  • ¼ teaspoon rubbed sage, optional
  • 1 tablespoon butter, if needed
  • Chopped fresh parsley, optional, for garnish
  • Warm buttermilk biscuits, for serving

Directions

  1. Heat a large skillet over medium heat. Add the breakfast sausage and cook, breaking it into small crumbles with a spoon or spatula, until browned and completely cooked.
  2. Do not drain the sausage unless there is an excessive amount of grease. You want to keep a little of the flavorful drippings in the skillet for the gravy.
  3. Sprinkle the flour evenly over the cooked sausage. Stir well and cook for about 1–2 minutes so the flour coats the sausage and loses its raw taste.
  4. Slowly pour in the whole milk while stirring constantly. Add the heavy cream and continue stirring until everything is well combined.
  5. Add the garlic powder, onion powder, seasoned salt, black pepper, and sage if using.
  6. Reduce the heat to medium-low and simmer the gravy for about 5–8 minutes, stirring frequently, until it becomes smooth and creamy and reaches your desired thickness.
  7. If the gravy becomes too thick, stir in a small splash of milk. If you would like it richer, stir in the butter before removing it from the heat.
  8. Taste and adjust the salt and black pepper as needed.
  9. Split warm buttermilk biscuits in half and spoon the hot sausage gravy generously over the top.
  10. Garnish with a little fresh parsley and additional black pepper if desired. Serve immediately.

Pansy’s Tips

Don’t throw away all those flavorful sausage drippings. A little of the fat left in the skillet combines with the flour to help create the base of a rich Southern gravy.

Add the milk gradually while stirring. This helps prevent lumps and gives the gravy a smooth, creamy consistency.

Freshly ground black pepper is one of the flavors that makes sausage gravy so good, so don’t be afraid to add a little extra if your family enjoys it.

Remember that the gravy will continue to thicken as it sits. If it gets thicker than you like, simply stir in a splash of warm milk until it reaches the consistency you want.

For a complete Southern breakfast, serve the gravy generously over warm homemade buttermilk biscuits with eggs on the side.

Serving & Storage

Serve Pansy’s Southern Sausage Gravy hot over freshly baked buttermilk biscuits. It also pairs well with scrambled or fried eggs, breakfast potatoes, grits, or fresh fruit for a hearty Southern breakfast.

Store leftover sausage gravy in an airtight container in the refrigerator for up to 3–4 days. Reheat it gently on the stovetop over low heat or in the microwave, stirring occasionally. Add a small splash of milk while reheating if needed to restore its creamy texture.
